Looking to create iBooks of student work

Hi---
We are looking to consolidate student work into iBooks to download onto our
student iPads.
Students are creating their work on their iPads and sending it to their
teachers via email.
We have licenses for Creative Suite 3 and Microsoft Office
and faculty hardware is PC based (with some exceptions).
Does anyone have experience with doing this?
What worked best?

I appreciate any information you might have!
