If you're looking for a standalone device, you might look at the Zoom H2.
That's a hand-held audio recording device which records to SD cards. You can
then connect to a computer via USB and drag .mp3 or .wav files to the
computer. The H2 can be used for voice or music. The Spanish teachers in my
middle school are using digital voice recorders like those used to record
business conferences. They are somewhat less expensive than devices like the
Zoom.
As Lisa mentioned, there are a variety of approaches to using a PC or Mac to
record audio. With all these solutions, the challenge is how to store all
these digital files and keep them organized. We're working on a solution
that involves having students post audio files to Moodle.
Now that iPod Nanos can record video, I plan to buy one and investigate how
we could use them in the classroom. It might be an interesting multi-purpose
media recording device.
