Here are some things I would do:

1. Basics of the iPhone
2. Geocaching with an iPhone (http://geocaching.com)
3. Even tweeting with an iphone
4. Personal stories project using record features on the iPhone
5. Picture project using the iphone
6. Creating iphone Apps
